The brisket caddy is just for sizing and prep. After I inject, I will remove it. The scraps go into Lisa’s kitchenAid mixer for brisket burgers!Great prep-sizing & orientation technic, rather than post cook !
I wonder, do you cook with the brisket tray (for lack of a better word) or traditional without ?
