I have granite but still use silicone trivets/pads to set hot pans or anything metal on.

That's a rivet, no? You need to drill it out with a 1/8 or 3/16" HS metal bit and replace with same or a nut and bolt.

I don't have a Summit but a Akorn kamado. Spray with a vinegar solution or simple green and wipe down, rinse. I usually do it once a month.
