    Defrost time chart.

    Put mine in the cooler Friday evening. I need to have it thawed by Wednesday so I can spatchcock it, apply rub and dry the skin overnight in the frig. Everyone have a great Thanksgiving.

    P shaped bottom vents on Kettle

    I have the open and closed marked also. It's the 1/4, 1/2, and 3/4 open settings that are more difficult because the p shape doesn't seem to open in a linear fashion. Guess I'll just have to get used to it. Does anyone know why they changed it.

    Does anyone else think these are harder to adjust the percentage they are opened or closed (except full open or closed) than the old style? Maybe it's just me. Bought a new Performer last year and I think they are harder to adjust than the old style. I'm not really sure why they changed them.

    I plan on smoking 2 Berkshire hams on my WSM for Easter. I recently watched a video where the person skinned their ham before smoking it. I'd never considered doing that before. Any thoughts, recommendations or experience on the subject?

    We vacuum seal and freeze our left-overs in meal size portions for the 2 of us. After defrosting we put them in a steamer with apple juice. Never drys out that way.

    Happy Thanksgiving 2021

    Wishing all of you a happy and safe Thanksgiving. Apple brined turkey on the WSM and a ham on the Performer. Been making sides all morning. Our youngest daughter, son-in-law and 2 grandsons are with us today. This may be the last Thanksgiving we host. It's a lot of work. LOL
