I think my next go I will try par boiling the pasta and use a more mealty cheese and use more bacon to cover better and leave in the fridge over nite and maybe a spritz of cider a couple times. I agree with your description
Yes the shell is a bit chewy. I think next go around will be a little water for moisture and maybe extra wrap of bacon? More moisture? It was still demolished 😉
